This dressing is my absolute favorite as you can literally whip it up with any greens in your fridge and it turns a plain old salad into a taste sensation!
Its not really a recipe but more of a throw everything into the blitzer and create a lush, fresh dressing that will last in the fridge for weeks!
What you will need:
- 1/2 cup Olive Oil
- 1/2 cup Vegetable Oil
- Handful of Basil Leaves*
- Handful of rocket leaves
- Two heads of parsley
- 1/2 cup cashew nuts**
- 2 Tablespoons of Parmesan
- Maldon Salt (to taste)
- Splash of White Vinegar
- Squeeze of 1/4 lemon
*can replace with Coriander or Spinach - or include both. I often just add it all!
** Can also use pine nuts OR pumpkin seeds.
Throw all of this into a blender and blitz until smooth. To be honest just add more of anything to make it runnier - or thicker.
I make jars of this in the summer and throw it on salads, potatoes and make it a bit thicker as a dip. You can zest it up with more lemon or add a bit of heat with a flick of chili.
